Slow Cooker Beef Stew

Ingredients:

1.5 lbs beef stew meat, cut into chunks
3 cups beef broth
4 carrots, peeled and chopped
3 potatoes, peeled and diced
1 onion, chopped
3 cloves garlic, minced
2 tbsp tomato paste
1 tsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
½ tsp salt
½ tsp black pepper
2 tbsp flour (for thickening)
1 cup frozen peas (optional, added at the end)

Instructions:

  1. Brown the beef (optional but adds flavor): In a pan, sear the beef chunks in a little oil until browned on all sides.
  2. Add everything to the slow cooker except the peas and flour. Stir well.
  3. Cook on low for 7-8 hours (or high for 4-5 hours) until the meat is tender.
  4. Thicken the stew: About 30 minutes before serving, mix 2 tbsp flour with a little water to form a slurry, then stir it into the stew.
  5. Add peas and let them warm through in the last 10 minutes.
  6. Serve hot with crusty bread for a cozy meal.
