Oma’s Holiday Seafood Casserole

 

Ingredients:

1 pound lobster meat (cooked)
1/2 pound scallops
1/2 pound medium shrimp (or small Maine
shrimp, use 1 pound cooked and shelled)
1 pound linguine
8 ounces whipping cream
1/2 cup parmesan cheese (fresh grated)
4 tablespoons butter

Instructions:

  1. Cook linguine and toss with 1/2 the cream and 1/2 the cheese. Keep warm.
  2. Sauté in order: the scallops, the shrimp and adding the lobster last, only 3-4 minutes. Cook only until hot (do not overcook!).
  3. Add the rest of the cream and pour on top of the pasta or a large platter or casserole. Top with parmesan cheese. Could add buttered crumbs and brown briefly under the broiler.
  4. Serve at once. Makes 8 servings.

(Note from Oma: A less expensive dish could be made without the lobster using more shrimp and possibly crabmeat.)
