Fresh Cranberry Relish

Ingredients:

12 oz cranberries
1 large navel orange stem end trimmed off – cut into 4 wedges
1/2 – 3/4 cup sugar
1/2 cup walnuts

Fun additions:
½ tsp vanilla
tart apple
a dash of cinnamon

Instructions:

  1. Rinse cranberries and pick out any that are soft.
  2. In a food processor, chop the orange wedges (peel and all!), then add the cranberries and pulse until fairly well mixed. Add nuts and pulse until chopped.
  3. Mix in sugar to taste and let the flavors meld in the refrigerator for at least a week before serving.
