Butternut Squash Soup 2

Ingredients:

1 medium chopped yellow onion (about 1 cup)
1-2 stalks of chopped celery (about ¾ cup)
1-2 chopped carrot (about 1 cup)
2 tablespoons unsalted butter
6-8 cups butternut squash, seeded, peeled and chopped
1 large tart green apple, peeled and chopped
3 cups chicken or vegetable broth
1 cup water
Pinch nutmeg
Pinch cinnamon
Salt and pepper to taste

Instructions:

  1. Melt butter and sauté the onion, celery and carrot for 5 minutes. Add the butternut squash, apple, broth and water. Bring to boil. Reduce to a simmer, cover and simmer for 30 minutes or until the squash and carrots have softened.
  2. With an immersion blender, purée the soup. Add the nutmeg and cinnamon, and salt and pepper to taste.
  3. Garnish with chopped fresh parsley or a dollop of sour cream.
