Ingredients:
1 medium chopped yellow onion (about 1 cup)
1-2 stalks of chopped celery (about ¾ cup)
1-2 chopped carrot (about 1 cup)
2 tablespoons unsalted butter
6-8 cups butternut squash, seeded, peeled and chopped
1 large tart green apple, peeled and chopped
3 cups chicken or vegetable broth
1 cup water
Pinch nutmeg
Pinch cinnamon
Salt and pepper to taste
Instructions:
- Melt butter and sauté the onion, celery and carrot for 5 minutes. Add the butternut squash, apple, broth and water. Bring to boil. Reduce to a simmer, cover and simmer for 30 minutes or until the squash and carrots have softened.
- With an immersion blender, purée the soup. Add the nutmeg and cinnamon, and salt and pepper to taste.
- Garnish with chopped fresh parsley or a dollop of sour cream.
