Apricot Bars

 

Ingredients:

1½ cups sifted all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1½ cups old fashioned oats
½ cup brown sugar
¾ cup butter
¾ cup apricot preserves (recommend adding some lemon juice)

Instructions:

  1. Preheat oven to 375°
  2. Sift together dry ingredients; stir in oats and sugar.
  3. Cut in butter till crumbly; pat 2/3 of crumbs in 11×7×1½-inch pan.
  4. Spread with apricot preserves, top with remaining crumbs.
  5. Bake in moderate oven (375°) about 35 minutes. Cool.

Makes 2½ dozen.
